Mushrooms are one of our favorite vegetables. They fit into almost every diet and wellness plan, whether you’re on a Whole30, paleo, keto, low-carb, gluten-free, or plant-based diet. We love that they’re low in calories but packed full of flavor, not to mention they’re a great source of protein, fiber, vitamins, and minerals. This easy Garlic Herb Sauteed Mushrooms recipe only requires five ingredients and a few minutes of your time. It makes the perfect complement alongside a lean protein for dinner, but you could also eat them whole as a snack!
5-Ingredient Garlic Herb Sauteed Mushrooms
We designed this simple recipe around small button mushrooms. You could certainly make it with other mushrooms, like crimini or shiitake mushrooms, but you might want to quarter them to help them cook through. You can cook very small button mushrooms, which means you won’t need to spend the time prepping them up! Plus, they have a fantastic texture when they’re cooked whole, so try to find some small mushrooms and give it a try!
Once you have your mushrooms on hand, this recipe couldn’t be easier to bring together. After cooking the mushrooms in the olive oil for a few minutes, you’ll notice they release their water. That’s a sign that it’s ready to move on to the next step: adding the garlic. Garlic can burn if it’s cooked for too long, which can make it taste acrid. For the most full-flavored, garlic-forward mushrooms, keep your cooking time to about a minute here.
Then, remove the mushrooms from the heat and toss them with the fresh herbs. Cooking the herbs would reduce their aromatic quality and flavor, so we like to add the herbs after the mushrooms are finished cooking. It’s as easy as that!
